Naples is the birthplace of pizza — which makes it a hard place to visit if you can't eat gluten. The good news: at EVO50, in the heart of the UNESCO historic centre, you can eat real Neapolitan pizza that's prepared with a dedicated gluten-free process. Here's exactly how it works, so you can plan your visit with confidence.
Yes. At EVO50 every pizza on our menu is available in a gluten-free version — from the classic Margherita to our signature EVO50. We don't treat gluten-free as an afterthought or a single sad option: it's the same menu, made so that a coeliac guest and a non-coeliac guest can sit at the same table and order the same pizza, each in their own version.
This is what matters most for coeliac guests, so we're specific about it.
We use certified gluten-free bases made by Amonoglù, an Italian producer specialised only in artisan gluten-free pizza. The bases arrive individually sealed in a controlled atmosphere, each on its own single-use aluminium tray.
We top them on a dedicated station, separate from the classic pizza counter. The base is then baked alone in the oven — never alongside pizzas containing gluten — because the single-use tray fully isolates the dough from the oven surface.
A detail few places mention: on the classic pizza station we use rice flour instead of wheat flour, specifically to limit airborne gluten particles in the kitchen.
Since 2019 we have never had an incident. That track record is the reason many coeliac guests choose us.
We believe in being straight with you. EVO50 is not AIC-certified, and we are not a 100% gluten-free venue — we also serve pizzas with gluten. We work seriously and carefully, but if you have a severe sensitivity that requires a fully dedicated environment, please call us first at +39 081 377 4751 so we can talk it through and make sure we can serve you safely.
Eating gluten-free here doesn't mean skipping everything except the pizza. We make gluten-free bread in-house, served with two of our starters — aubergine parmigiana and plated buffalo mozzarella. EVO50 is at Calata SS. Cosma e Damiano 22, in the UNESCO-listed old town — a few minutes on foot from the Duomo, Spaccanapoli and the University of Naples Federico II. It's an easy stop whether you're sightseeing during the day or looking for dinner in the evening (we're open Monday to Saturday, 7–11 PM).
